THE PIGEONNIER
This remarkable dovecote is of medieval origin, more precisely dating from the 15th century.
It is part of the remains of the feudal castle of Vailly-sur-Sauldre (of which only a few elements remain today, such as the north-east tower housing the common oven).
At that time, possess a pigeon-house (or « Dove ») was a seigneurial privilege. It was a symbol of power and wealth, for the pigeons supplied both delicate meat and meat. « Cobbin » (fiente), an extremely valuable fertilizer.

The historical dovecote of Vailly-sur-Sauldre is a witness to the feudal organization of the Lower Middle Ages. It is part of this typical landscape of Pays Fort where massive rural buildings and wooden structures (woodpans, torchis) dominate.
